Boat dip is one of my favorite dishes to serve at parties or other events where I'll be serving a lot of chips. Boat dip is simple and quick to make, 10 minutes to put together, with sour cream, cream cheese, taco seasoning, well-drained tomatoes and green chiles, and other Mexican cheeses. Fans of spicy and mild flavors enjoy boat dip with chips.

Remove cream cheese from the refrigerator about an hour before other ingredients. Beat cream cheese in a medium bowl until smooth before adding other ingredients. Cream cheese may leave lumps when beaten cold. A spatula can be used to beat cream cheese, though I recommend an electric mixer after the cream cheese has softened.
Cover and refrigerate the bowl for at least 30 minutes in advance if you can. The taco seasoning and other ingredients in the bowl will soak up liquids from other ingredients as the mixture chills. I usually offer sturdy tortilla chips with this dish just before serving. Other items you can offer to feed more people include corn chips, potato chips, crackers, and raw vegetables. Slices of toasted baguette and pita bread are other possibilities if you don't have tortilla chips.
To spice things up, try adding 1/4 cup diced pickled jalapeños and 4 bacon slices, crumbled, to the recipe and more jalapeño slices as a topping. Use dry ranch seasoning in place of fresh ranch. Adding black beans and corn increases the heartiness of the dish. More shredded cheese would be added as a topping in both variations.
Why you'll love this recipe
- 1It feeds 12 people and provides enough dip to serve at a party on a platter. Other appetizers are not necessary.
- 2No cooking necessary. This may be an advantage if other foods are being cooked in the oven.
- 3Cold chips in a bowl are convenient for transport in a cooler and to eat outdoors.
- 4Green onions and cilantro can be omitted for customers ordering cheese only.
- 5It complements Philly cheesesteak sliders offered at events with multiple food options.
